SPANISH RICE CASSEROLE

1 lb. hamburger
1 onion, diced
1/2 tsp. pepper
2 c. tomato juice
1 1/2 c. grated cheese
1 c. rice, uncooked
1 tsp. salt
1 med. bell pepper, diced
1 1/2 c. boiling water
Brown hamburger, onion, salt, pepper and bell pepper. Drain. Add rice, water and tomato juice. Pour in 9 x 13 inch baking dish. Cover with foil and bake for 1 hour at 300 degrees. Uncover and sprinkle with grated cheese. Return to oven for 10-15 minutes. Serves 6.
